Immersion Brew

An introduction to single serve brew both in a cafe setting and from your home. Reach the potential of your coffee exploration with our brew ratios and coffee.

Many specialty coffee shop baristas and home brewers are familiar with the different brew methods like pour overs, espresso and immersion brew. Immersion brew has become a shop favorite among all our baristas. Immersion is when you allow the coffee grounds to steep in the water over a period of time and filter afterwards. Some familiar examples of immersion brew are the french press, aeropress and cold brew.

The three different immersion brews that we offer in store are Clever Dripper, Aeropress and Cold brew. Below are the different techniques, coffees and ratios we use in store.

Cold Brew: The desired profile in store is a juicy and tea like mouthfeel that is refreshing and a nice sweet complex flavor. We use either our Honeybee or Capitan Black beans to achieve this profile.

Grind Size: Coarse

Ratio: 100 grams of ground coffee per liter of water

Brew Time: 48 hours

Brewing Instructions: We use Alto Cold Brew equipment but you could use any vessel that can be closed air tight. Add the coffee to your vessel or cold brew filter. Then add the room temperature water and agitate. Once all the water and coffee are in the vessel place in the refrigerator for 48 hours. After the coffee has steeped remove the cold brew filter or filter the coffee out of the water. This will produce a cold brew concentrate that can be diluted over ice or with milk and sweetener.

Clever Dripper: The desired profile is a very clean bright but balanced cup. A customer favorite in the shop is the Pegasing for its delicious sweet, delicate flavor and floral aromas.

Grind Size: Medium to fine

Ratio: 28 grams of ground coffee per 350 mL of water

Brew Time: 4 min

Brewing Instructions: Clever dripper is the brand of the style immersion that we use. Another alternative is the Hario Switch. Both use the immersion method similar to a french press but have a paper flavor which provides a very clean cup. First place your paper filter into the Clever Dripper. Then add 350 mL of water at 205 degrees fahrenheit and immediately add the 28 grams of coffee and agitate and start your timer. Once the timer reaches 3 min 30 seconds break the crust of coffee. After 30 seconds you will place the brewer on the the vessel or mug and allow the coffee to fully filter.

Aeropress: Aeropress is a brewing device in which uses manual pressure to force air through the coffee grounds into the vessel of choice. The flavor we go for is a slightly concentrated espresso style coffee brew with lots of body and sweetness. We recommend using our Flores Kartika for a nice complex flavor with lots of body and sweetness.

Grind Size: Fine

Ratio: 35 grams of ground coffee per 150mL of water

Brew Time: 2 min 30 seconds

Brewing Instructions: Place 35 grams of coffee grounds into the aeropress inverter with the filter side facing up with the filer screen off the aeropress. Then add 150mL of water at 205 degrees fahrenheit, agitate and start timer. Once the timer has reached 2 minutes place the paper filter and screen on the aeropress and invert the aeropress with the filter screen in your brew vessel or coffee cup and press the aerpress down. The target time is 30 seconds and we press until we start to hear the air hiss through the coffee.

These are just some techniques we use in shop and can all be adjusted to preference. The goal in the end is to brew your preferred coffee profile.
